For a 24 cm cake pan:

  • 700 g apples
  • 3 eggs
  • 70 g butter
  • 300 g flour 00
  • 250 g sugar
  • 1 glass of milk
  • 1 lemon
  • 1 sachet of baking powder


  1. Peel and cut the apples into small pieces, sprinkling them with the juice of a lemon to prevent them from browning.

Meanwhile, whip the egg whites until stiff and beat the yolks separately with the sugar.

  1. Add the softened butter to the eggs and beat.

Pour a glass of milk and mix until the cake mixture is smooth and homogeneous.

  1. Now add the flour with the baking yeast and the lemon zest.
  1. Now incorporate the beaten egg whites. Finally, add the apples to the batter.
