The story of this dessert

Apple fritters are a typical dessert of the Italian tradition with an ancient history behind it, which probably originates in Alto Adige, an area rich in apple orchards and has always been associated with the production of apples.

After all, South Tyrol offers twelve varieties of apples, each with its own characteristics of color, flavor and texture, which are well suited to the preparation of apple fritters, a dessert that is generally prepared during the winter holidays such as Christmas and Carnival, perhaps alongside the classic frappe and castagnole.

Apples since the Middle Ages were cut into thin slices, placed in a sweet batter of milk, eggs, sugar and flour and left to fry in oil or animal fat, which was more available at that time.

How to make apple pancakes

1. Beat the egg with the milk, sugar and a pinch of salt in a bowl.

2. Add the sifted flour with the baking powder, mix everything and let the batter rest for 30 minutes in the refrigerator, covering with cling film.

3. Peel the apples and core them using the appropriate tool. Then cut them into slices of about one centimeter on the short side to obtain so many apple donuts. Put them in a bowl and sprinkle them with lemon juice.

4. Dip the apples in the batter and fry them in plenty of hot oil until they are golden on both sides.

5. Once cooked, place the apple pancakes on absorbent paper to remove excess oil.

6. Sprinkle the still hot pancakes with powdered sugar and, if you like, also with ground cinnamon and serve.

– For a delicious dessert, accompany the apple fritters with cream ice cream.
