• To make the macarons, you must first chop the almonds together with the icing sugar, using a food processor.

Once the almonds have been reduced to powder, we proceed to sift them.

At this time, in a large bowl, with the help of some electric rods, beat the egg whites until stiff. During the preparation phase, add a pinch of salt to the egg whites and, at various stages, also add the granulated sugar.

• At the end of the operation, put the almond flour in another bowl. Then add a tablespoon of meringue to smooth everything out.

At this stage of the process, you will need to mix carefully. With the help of a silicone spatula, proceed to incorporate, with movements from the bottom up, all the meringue.

• Finish your cakes by shaping the macarons. Equip yourself with a piping bag with a smooth nozzle. Therefore, line a baking sheet with parchment paper.

At this point, form many small circles about 3 cm in diameter on top with the piping bag. Once all the French sweets are formed, let them rest for 60 minutes in the fridge.

• After the indicated time, put them in a preheated and static oven at 140º for about 15-20 minutes. Be careful not to activate the convection oven!

After the first 10 minutes of cooking, open and close the oven. Once cooked, remove the sweets from the oven and let them cool.

• Meanwhile, prepare the cocoa filling: put the cream in a saucepan, turn on the heat and bring to a boil.

Then add the previously grated black chocolate and the Santa Lucía butter. Now mix everything until the chocolate melts well. At this point, allow the ganache obtained to cool.

• Once cold, take 1 piece of macaron and with the help of a spoon fill it with the cream obtained by placing it on its flat side.

So place the shell of another candy on top of the filling. Repeat the operation until all the candies are used up.

Although their origins are quite uncertain, it is believed that they were invented in Venice and then came to France thanks to Caterina de Medici.

For example, if you want to make coconut macarons you can substitute coconut flour for the chopped almonds to make the shells and combine it with a macaron filling of the same flavor (perhaps a mascarpone-based coconut cream) or go for contrasting flavors, such as a filling with dark chocolate or flavored with a vanilla bean.

And if you want to challenge yourself with a more difficult version, you can make them with a salted caramel filling, but in this case you’ll need a kitchen thermometer to check the temperature of the sugar.

And if instead you are a lover of crunchy fillings?

If, on the other hand, you are a lover of crunchier fillings, chop the hazelnuts and almonds with the help of a blender and mix them with cream.

Those who can’t give up pistachios can use green food coloring for the meringue mix and choose between a pistachio kernel cream or a smooth white chocolate filling. Lovers of stronger flavors, on the other hand, can try the coffee cream macarons with amaretti dough: a truly surprising combination.

You can also add cocoa powder to the batter to make delicious chocolate macaroons. The recipe for chocolate macarons is precisely the one that always manages to please everyone: whether they are white, milk or dark, added to the meringue or in the filling.

If you have leftovers, you can also use them to create a spectacular macaron cake.
