Instead of sweetening cakes with sugar, medieval cooks used naturally sweet ingredients, such as carrots.

Here is my foolproof recipe, which has been perfected after years of experimentation in my kitchen:

Ingredients

2 cups of grated carrots

1 cup brown sugar

3/4 cup vegetable oil

3 large eggs

2 cups wheat flour

1 teaspoon of baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon powder

1/2 cup chopped walnuts

1/2 cup raisins (optional)

Instructions

Preheat the oven to 180°C. Grease and flour a cake pan.

In a large bowl, mix the grated carrots, brown sugar and vegetable oil.

Add the eggs one at a time, beating well after each addition.

In another bowl, combine the flour, baking soda, baking powder, salt and ground cinnamon.

Incorporate the dry ingredients into the carrot mixture in three parts, stirring well at each addition.

Add the chopped nuts and raisins (if desired) to the cake batter.

Pour the batter into the prepared pan and bake for approximately 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for a few minutes before unmolding and placing it on a wire rack to cool completely.
